    I like the "Understanding Language Series," and "Understanding Phonology" by Carlos Gussenhoven and Haike Jacobs is another great volume in the series. This series tends to be a bit old fashioned in that the main focus is explaining concepts than teaching analysis, but the authors do an excellent job clearly explaining fundamental concepts in phonology and giving the reader an excellent overview of phonology.

    I'm well versed in phonology, but I'm not a phonologist (I'm a syntactician). I teach phonology as part of an intro to linguistics as well as an intro to phonology. I know most of what's discussed in this book, but it helps me deepen my understanding of phonology and how I could better teach some of the concepts to my undergraduate students. This is an accessible textbook, but I'm not sure how much the average undergraduate linguistics s major (in the US) can get out of this book to be honest. It's accessible but it's dense. If I were to use this book as a textbook in my course, I would have to do a good amount of scaffolding to make the text accessible to undergraduate students and adding data sets for analysis.
